Don’t panic! The good news is that you are not too late. But if you want to eat Christmas Pudding on Christmas day, you must start soon.

You might be wondering, “Why must I start in November? It’s bananas!”

It’s true that it seems strange. But you must make this fruitcake four to six weeks before Christmas for a good reason: the flavour and colour intensify over time. So, if you make the pudding one week before Christmas, it won’t taste or look as good.

So, what is Christmas pudding? It’s a delicious blend of dried and fresh fruit, candied fruit, spices and some brandy. Some people prefer rum but brandy is the traditional alcohol for Christmas pudding.

Start work on your pudding on the last Sunday in November. This day is called Stir Up Sunday. Why? Because you must stir the ingredients for the fruitcake, of course! Also, traditionally, every family member stirs the batter. When they stir, they must make a wish. But shh! Don’t tell anyone your wish. If you do, it might not come true…

Once the cake is ready, steam the pudding for eight hours. Then, store it in a cool, dry place and ‘feed it’ once a week until Christmas. Feed it? What does that mean? Feeding the fruitcake means that you add brandy to it every week. This keeps the fruitcake moist, and makes it tasty. The alcohol also preserves the pudding so it doesn’t go mouldy.

Then, on Christmas day, steam the pudding for another hour. It can steam while you’re eating your turkey lunch. That way, it will be ready for dessert. Serve it with cream, custard or some vanilla ice-cream. Enjoy!
